No electricity for a week plus. Holy freaking caveman! Seriously the Houston heat combined with my windows being so old and painted over that they don’t open made for some horribly icky sleep. Don’t get me wrong I did take up some offers to sleep over at family’s but everyone has firm beds that was even worse then heat. I rather take the heat with my pillow top + memory foam bed topper.

We just got our electricity last night and ohhh man was it nice to sleep on MY bed with my pets with A/C!!! Best sleep in a LONG time! Right now I’m at the Starbucks in a grocery store down the street from my house because I’m still with out internet. I’m pulling together my coupons, shopping lists and all that fun stuff. But I’m pissed my downstairs neighbor stole half of my newspaper (front section & coupons), just because I’m not home doesn’t give you fucking dibs on a paper I PAY for! And it had coupons for soup I wanted and that would come very cheap this week…grrrr. LOL I’m being nutso but it hasn’t been the happiest of weeks. I’m just happy all of my family is safe and nothing too major happened to anyone’s houses. Well I have to go off and shop..since I have NO groceries (only a few cans of Monster in my fridge).

OH OH OH and can someone recommend some healthy sides for dinner. We fell off our healthy eattingness (um hello made up word!) during the summer and are getting back on because eatting like shit makes us feel like shit. LOL So sides! They can be fresh or even packaged, as long as they aren’t horrible for you. Thanks!!!

    Okay. So I love food.

    I love all kinds of veggie side dishes. Tonight I’ll be making a marinaded pork tenderloin with potatoes, carrots and asparagus.

    Asparagus is easy to make. I like it a bit crunchy and not floppy. Snap the ends off, place them in a bowl with a little bit of water, saran wrap it, and nuke it in the microwave for 2:20 minutes.

    Carrots are delicious if you just add a tbsp of low fat butter/margarine to the pot – I cannot eat them any other way now.

    Roasted potatoes: coat in olive oil, salt and pepper, italian seasoning. 350ยบ for 1 hour. Done! Clean up is easy if you just cover your pan in tinfoil.

    I also love these potatoes that taste like something you’d get from a restaurant. Parmesean Garlic Potatoe Wedges. You’ve GOTTA try them.

    Broccoli with Garlic Butter and Cashews is a hit with the BF and I too… (posting all of these is making my mouth water)

    Have you ever tried Knorr’s Frozen Meals? I like the chicken in the vodka sauce (I think that’s what it is) but it’s really high in sodium so we just buy it like once every three months, and whenever we’re in a hurry we just open it up and put it on a skillet and make some basmati rice with it.

    I’ve got a great recipe for rice too. I know way too many people that take way too long to make a pot of rice. Someone taught me a quick and very time efficient way to make rice in less than 12 minutes! I just boil my water, add in my 1 cup of Basmati/Jasmine rice (or any kind for that matter) keep it on max or close to it. TIME THIS PART. Set your timer for 11 minutes, stir occasionally but you don’t really need to since it’s practically boiling constantly. Once the 11 minutes are up, strain the water out of your pot. Let the rice sit in the warm/hot pot for 2-3 minutes. Fluff it up with a fork, and serve. It tastes amaaaaaazing.

    Salads are always a nice side dish. Less the creamy dressing the better. Creamy = fatty.To keep lettuce crunchy. Keep in an airtight… bag? or something. Put a piece of paper towel in with the lettuce. It will soak up the moisture and will not leave your leaves limp. Replace the paper towel daily or so.

    Wow, I got a little carried away there.

    Doesn’t it make you wonder how Laura Ingalls Wilder did it? Anytime our power is out, I start to feel so bored and nutty. I can’t decide if that means I’m really pitiful or incredibly technologically advanced.

    Good luck with the eating healthier… it’s definitely not as easy as it should be!

    i remember living w/o power for months at a time while i was living on guam. one typhoon was so bad that it blew up our gas tanks (the only source for gas on the whole island) so gas station lines were ridiculous. we couldn’t go anywhere because we had no gas for our cars and had to stay at home without power for a month straight! it sucked!

    the only healthy side i can think of are just a bunch of vegetables and frozen edamame boiled in salt water.

    green bean casserole
    sauteed zucchini w/ garlic

    sautee some lettuce/cabbage/greens in some oil, soy sauce, garlic, add diced firm tofu chunks, and eat it with white rice. not really a side but it’s good and healthy besides the high sodium.
