I’ve decided every Monday will be Meatless Monday. It’s good all around because you are buying 1 less meat product a week & putting 1 less dead animal in your body. I’m no vegetarian but I don’t really like the thought of eating meat… I went through a time where the taste of meat would make me sick. Well anyways this week we had Chickn Burgers & steak fries. NOM! These are seriously soooo good, I could eat them everyday. Actually all the Morningstar products I’ve tried are sooo good…and no they aren’t sponsoring this post. But hey if they want to fill my freezer full of non meat goodies I’d be good with that. Oh and Smart Ones frozen meals are REALLY good & they aren’t horrible sodium filled meals! It’s funny I’ll try any kinds of foods & with coupons I just eat what’s on sale (I won’t buy frozen meals usually, freezer is for meat & ice-cream). And lately I’ve been getting some pretty healthy foods on sale. I got a full chicken for $0.34 & ground chicken for $0.99/lb.  We love our chicken, very little red meat gets consumed. Okey this is such a random food post, but I promise for the most part we eat healthy…minus the pints of starbucks ice-cream I love consuming at every chance.

Oh and the menu this week included:
Monday: Chickn Burgers & baked steak fries
Tuesday: Wholesome Helper with ground chicken
Wed: Baked Chicken & Spinach and Cheese mashed potatoes
Thursday: Steak & leftover mashed potatoes
Friday: Ummm I don’t know yet…

Oh and I’d love some suggestions for meatless Monday!! And preferbly a recipe that won’t cause me to have to buy zyatonix for the ole’ belly!

    Do you like curry? I’m making an awesome vegetarian curry dish right now, yummm. Coconut milk, curry paste, mixed veggies on top of basmati rice.

    Tofu in stirfry is also good. I often have some variety of pasta with seasonal veggies. Usually I make whatever I would have eaten during my pre-vegetarian days, just minus the meat!

    I don’t know if I’ve had curry before… is it spicy? Hubby is a big wimp when it comes to spicy LOL

    There’s mild & spicy curry. I suggest trying a butter chicken sauce, which comes in a jar.. just heat & serve! (There isn’t actually chicken in it, it’s just a cream & tomato based sauce). The curry paste is great too b/c you control exactly how strong it is!

    I love good cheese mashed potatoes. I’d love to eat at your house. I eat vegan meals during the week so I’m accustomed to meatless meals! Some vegan products are pretty nifty.

    I’ve been hooked on Quesadillas lately. Trying different cheese mixtures for the right flavor and meltiness. I’ve been using lots of pepper, Vadalia onions and bratwurst for filling. But I bet that Chickn would be good in there too. Cheese makes everything better!

    Oh and those leftover mashed potatoes would be good in Perogies or potato pancakes. :)

    Morningstar Farms is a Godsend for vegetarians like me. Sometimes bowls of veggies just aren’t filling enough! :P
    More meal ideas… anything with the MF crumbles… tacos, nachos, sloppy joes, Hamburger helper, spaghetti, … anything! And the Chik’n strips are awesome for fajitas, quesadillas, or stirfry. Well,any of it is perfect for any “normally meat” dish! :)
