
Last weeks Thursday & Friday didn’t happen…we did leftovers & family’s house instead so I just moved them over to this week instead.
Monday: Going out to eat…sushi or Vietnamese
Tuesday: Chicken & rice
Wednseday: Rice Lasagna
Thursday: Chicken burgers with baked steak fries
Friday: Meatloaf with spinach mashed potatoes
*every meal is served with a salad*
My flautas recipe is coming up! I wrote it..forgot to save and got discouraged but I’ll be putting it up as soon I finish it up again!

Yesterday I posted my dinner menu for the week, yesterday quite a few people asked for me to let them know the lasagna rolls turned out. WONDERFUL. That’s how…but I can never quite follow a recipe. So I decided to share my slightly modified version with y’all! You can also view/print the recipe here at Tasty Kitchen. And look out for my flautas recipe tomorrow… they were awesome which means I ate way too many… mmm fried deliciousness! Good thing Micah has been keeping me active or I might have needed the best weight loss supplement!

Ingredients
- 20 whole Lasagna Noodles, Cooked
- 8 ounces Cream Cheese (Softened)
- 1 package Fresh Brown Mushrooms
- 1 package Fresh Spinach
- 4 ounces, weight Feta Cheese
- 2 packages Sliced Mozzarella Cheese
- 1 jar Alfredo Sauce
Preparation Instructions
Heat oven to 375F.
In a pan with a little nonstick spray, cook the mushrooms until browned and spinach until wilted.
In a bowl, mix together the cream cheese, feta cheese, mushrooms and spinach. Split the slices of mozzarella down the middle.
On a lasagna noodle, put down 2 of the halves down the center, then spread some of the bowl mixture onto the noodle. Roll up.
Place rolls on a baking dish seam down. Smoother tops with Alfredo sauce.
Bake for 25 minutes or until warm throughout.
Three rolls is a serving. This recipe makes about 18 rolls, depending how much you stuff in each roll.
*Note: You can also use spaghetti sauce instead of Alfredo sauce to change it up. And I cook more noodles than needed, just in case those darn noodles go crazy and rip up.

Every morning we sit together watching Sesame Street (or some other show) and play. The toys get rotated daily to keep him entertained. His kitchen is the newest addition to his toys, I picked it up at the Target toy sale and JP decided to bust it out on Friday. It was too cute, I came home & Micah was having a ball playing with his kitchen. Maybe next time some kitchen accesories, a car & car accessories.

Tonight we are going to bar-b-q. Hamburgers, kabobs and baked potatoes…OH MY! A nom filled night…now if I could just figure out a nommy dessert…S’MORES? Maybe….just maybe… off to the store we go!

Somedays all I want to do is lay in bed with Micah to talk about how awesome the sheets & pillows we have are. But then I remember…I have to do…stuff. Stuff being cleaning, cooking, working, grocery shopping, and changing diapers. It’ll be awesome when he’s 13 and sleeping in until 10am when he doesn’t have to go to school…I too will sleep in. Sleeping in is the best thing ever…and I want the best thing ever.

Today we used my $75 off $100 purchase at Old Navy. We all got some new clothes & for cheap! I’m a happy mama! Micah is still awake and it’s 10pm. This boy is nuts. And I bet he’ll still wake up at 7am tomorrow, weirdo. Maybe he’s celebrating that he turned 7 months today?

Life has been SO hectic. But life usually gets all crazy if I don’t make lists…and that is something I haven’t been doing lately. Does anyone else feel like if they don’t write to-do lists down then they are all over the place? That’s me. So right now I have a pen & paper next to me..writing down things I need to do in the next week, then I’ll break it down day by day. That’ll hopefully help me feel more organized and not so nutty.
Last week I was luckily to get one of the much coveted 75$ off 100$ purchase coupons at OldNavyWeekly’s website! So later this week I’ll be getting Micah some clothes for when the weather gets cool, some jeans for myself, possibly women shoes and more socks for Micah. Sometimes I think that our dog might be eating Micah’s socks…he’ll eat just about anything so I really wouldn’t put it past him.
Alright this was my break from working…so back to my pile of work. If you printed out my work & stacked it up I bet it would be as tall as me I bet!
